Vibrant and exceptionally dry, this Specialty IPA showcases the innovative Polish Amora Preta hop variety alongside the expressive Gulo yeast. The sensory profile is defined by an intense aromatic burst of ripe peach, zesty citrus, and dark berries, supported by the yeast's unique ester profile and high attenuation. Weaving together the dark, roasted aesthetics of a Black IPA with a bone-dry farmhouse finish, the beer delivers a massive 21 g/l hop rate. Expect a crisp, refreshing character where the subtle debittered malt notes provide a backdrop for the tropical and resinous qualities of the Amora Preta hops, finishing with a sharp, clean bitterness.
Appearance. Dark brown to nearly black in color (35 SRM). It features a persistent, light tan head with moderate size and excellent lacing. The clarity is clear despite the dark hue, with no murkiness.
Aroma. High intensity hop aroma featuring distinct dark berry, tropical fruit, and resinous notes from the Amora Preta hops. The Gulo yeast adds a layer of citrus and stone fruit esters, specifically peach and orange. Malt character is very low, offering just a hint of toasted bread and light cocoa in the background.
Taste. Initial impression is bone-dry and hop-forward. Malt flavor is low with restrained chocolate and toast that does not clash with the hops. Hop flavor is high, featuring blackberry, grapefruit, and peach from the combination of Amora Preta hops and Gulo yeast. Bitterness is medium-high and firm. The finish is extremely dry and clean with a lingering berry-like hop aftertaste.
Mouthfeel. Medium-light body with high attenuation. Carbonation is moderate to medium-high, providing a prickly and effervescent sensation. Alcohol warmth is light and well-integrated. Smooth texture with no astringency, finishing exceptionally crisp.
