Inspired by the vibrant profile of Italian limoncello, this Straight Sour Beer presents a refreshing interplay of sharp acidity and calculated sweetness. The addition of freshly squeezed lemon juice drives an intense, citrus-forward sensory experience, supported by a clean, lactic sourness characteristic of the style. A base of pale malts provides a subtle, crackery foundation that allows the bright fruit notes to shine. The use of non-fermentable xylitol ensures a balanced sweetness that softens the tart lemon impact, resulting in a lively, effervescent profile that mimics the zesty, refreshing qualities of a Mediterranean citrus liqueur.

Appearance. Straw-yellow (3 SRM). Hazy to opaque due to the addition of fresh lemon juice. Large, white, fizzy head with poor retention. Highly effervescent.

Aroma. High intensity of fresh lemon zest and juice, creating a limoncello-like profile. Sharply sour lactic notes are prominent. Minimal crackery pale malt character. No hop aroma or fermentation byproducts.

Taste. Initial impression is a sharp, refreshing lemon tartness followed by a balanced sweetness from the xylitol. Clean lactic sourness dominates the palate. Very low bready malt flavor. No hop bitterness or flavor. Finishes with a lingering, sweet-and-sour citrus character.

Mouthfeel. Medium-light body, slightly fuller than typical for the style due to the xylitol addition. High carbonation provides a prickly, effervescent feel. No alcohol warmth. Crisp acidity.
