PINTA Barrel Brewing Transition

This decadent Imperial Stout emerges from an extensive twenty-six-month maturation in Willett Bourbon Barrels, presenting an incredibly complex sensory tapestry. The aroma is dominated by rich cocoa nibs and luscious dark cherries, underpinned by a deep roasted malt base reminiscent of espresso and bittersweet chocolate. On the palate, the velvet-smooth vanilla melds with charred oak and spirituous bourbon notes, balancing the tartness of the fruit. Its dense, viscous body carries a significant yet well-integrated alcohol warmth. This is a harmonious, slow-sipping experience where the lengthy barrel contact has softened the intense roast into a refined, multi-layered masterpiece of chocolate and stone fruit.
Appearance. Jet black and completely opaque (40+ SRM). It pours with a thick, mocha-colored head that subsides to a persistent fine rim, leaving oily legs on the glass indicative of high viscosity and alcohol.
Aroma. High intensity and multi-faceted; featuring prominent dark chocolate and roasted coffee malt character. The Willett Bourbon Barrels contribute charred oak, vanilla, and caramel, while esters of black cherry provide a vinous depth. Alcohol is noticeable but smooth, lacking any solvent harshness.
Taste. Initial impression is of rich bittersweet cocoa and deeply roasted grain. The cherries provide a bright, dark fruit acidity that balances the creamy vanilla and residual malt sweetness. Hop bitterness is moderate-high but integrated, supporting a long, warming finish of bourbon, toasted oak, and lingering dark chocolate.
Mouthfeel. Very full-bodied, chewy, and mouth-coating with a luxurious, velvety texture. Carbonation is low to moderate. A significant, smooth alcohol warmth is present throughout, providing a comforting glow without being hot.
