PINTA Barrel Brewing

This massive Imperial Stout presents a masterful intersection of scorched malt and refined spirits. Two years in Weller and Heaven Hill bourbon barrels have transformed the base into a liquid tapestry of decadent dark chocolate, espresso, and black licorice. The Weller casks impart a silky caramel sweetness, while the Heaven Hill wood adds structure with toasted oak, spicy vanilla, and a hint of charred coconut. Deep esters of dried figs and prunes weave through the palate, grounded by a firm, resinous bitterness. Without adjuncts to distract, the pure marriage of roasted grain and barrel-aged complexity creates a harmonious, warming finish that lingers with vinous depth.

Appearance. Opaque jet black (40+ SRM). A thick, creamy, dark tan head with moderate retention that leaves persistent lacing. High viscosity is evident by prominent legs on the glass.

Aroma. High intensity and complex. Dominant roasted malt notes of espresso, bittersweet chocolate, and scorched grain. The 24-month barrel aging provides a strong bourbon presence with layers of vanilla, caramel, and toasted oak. Moderate esters of raisin, fig, and prune are present, with very low earthy hops.

Taste. Intense and multi-layered. Initial flavors of dark cocoa and burnt sugar transition into rich bourbon-soaked oak. The malt profile provides coffee and licorice notes, supported by a medium-high bitterness that prevents a cloying finish. Mid-palate dark fruit esters of black currant and dried plum emerge before a long, bittersweet finish with significant barrel-derived vanilla.

Mouthfeel. Full to very full-bodied and viscous with a velvety, chewy texture. Low carbonation. A smooth, gentle warmth from the 13% ABV is noticeable but well-integrated, not sharp or solventy.
