PINTA Barrel Brewing Sight presents a sophisticated interplay of time and fruit. This Brett Beer, aged for 12 months, showcases a complex wild fermentation evolved through a six-week infusion of Polish Raspberries. The sensory profile is defined by vibrant, jammy berry notes harmonizing with the rustic, earthy funk of Brettanomyces. Expect an exceptionally dry finish typical of highly attenuated wild ales, where the natural tartness of the Polish Raspberries elevates underlying notes of hay and leather. It is a refined, fruit-forward exploration of maturation that balances intense berry character with a crisp, funky depth.

Appearance. Deep ruby to vibrant pink-red color. Pours with a moderate, mousse-like pinkish head that displays fair retention and light lacing. Slight haze is present from the raspberry additions and wild yeast suspension.

Aroma. High intensity of fresh and jammy Polish Raspberries dominates the nose. Supporting the fruit is a moderate funk consisting of wet hay, aged leather, and a hint of barnyard earthiness. Esters are predominantly stone fruit-like. No hop aroma or diacetyl is present.

Taste. Initial impression is a sharp, clean raspberry tartness. Malt flavor is low, providing a neutral, cracker-like backdrop for the aggressive berry character. Brettanomyces contribution is moderate, offering earthy and slightly smoky complexities. Bitterness is very low, and the balance is heavily tilted toward the fruit and fermentation character. The finish is bone-dry and crisp with a lingering raspberry skin aftertaste.

Mouthfeel. Medium-light body, thinned significantly by the high attenuation of the yeast. Carbonation is moderate to high, providing a prickly, refreshing effervescence. Light alcohol warmth is perceptible, and there is no significant astringency despite the fruit skins.
