Scarlet presents a complex interplay between three years of patient maturation and the vibrant addition of Red Currants. This Brett Beer opens with an inviting bouquet of tart red berries, merging seamlessly with developed rustic notes of wet hay and aged leather. The Red Currants impart a brilliant scarlet hue and a sharp, refreshing acidity that complements the bone-dry finish characteristic of extended Brettanomyces fermentation. On the palate, the fruit intensity provides a zesty brightness, while the three-year cellaring adds a sophisticated layer of earthy funk and mineral depth. It is a nuanced, highly carbonated wild ale that balances fruit-forward energy with mature, funky complexity.
Appearance. Brilliant scarlet to ruby-red color; maintains a fine-beaded, light pink head with moderate retention. Generally clear, though a faint haze from fruit pectin may be present.
Aroma. High intensity. Dominated by the sharp, acidic aroma of fresh Red Currants and pomegranate. Beneath the fruit lies a deep, complex Brettanomyces profile featuring barnyard funk, damp earth, and aged hay. Esters are fruity and berry-like; no significant malt aroma or hop character is present.
Taste. Initial impression is tart and bracingly dry. The flavor of Red Currants is vivid, providing a snappy fruit acidity that leads into a complex middle of rustic funk, leather, and mild peppery spice. Hop bitterness is very low, as the fruit and fermentation acids provide the balance. The finish is exceptionally clean and bone-dry with a lingering berry skin astringency.
Mouthfeel. Light body with a crisp, effervescent texture due to high carbonation. Very low alcohol warmth at 5.5% ABV. Refreshingly lean on the palate with a slight puckering quality from the fruit tannins and acids.
