PINTA Barrel Brewing Ridge is an elegant Brett Beer that showcases the interplay between long-term maturation and the delicate character of Polish Mirabelles. Following 17 months of wild fermentation and an additional seven months on fruit, the beer presents a complex profile where the bright, honeyed sweetness of yellow plums meets rustic fermentation notes. Expect a sensory journey from initial aromas of sun-ripened stone fruit and dried hay to a palate defined by earthy funk and a gentle, fruit-driven tartness. The extended aging provides a deep integration of Brettanomyces character, resulting in a sophisticated, highly attenuated, and dry wild ale with a nuanced, lingering finish.

Appearance. Deep gold to pale amber with a slight, hazy luminescence from the mirabelles; pours with a fine-beaded white head that shows moderate retention and delicate lacing.

Aroma. High aromatic intensity featuring prominent notes of ripe yellow plum and apricot; the Brettanomyces provides a secondary layer of barnyard funk, wet hay, and aged leather, over a faint, crackery malt base.

Taste. Initial impression is dry and fruit-forward, dominated by the succulent, slightly floral taste of Polish Mirabelles; moderate-low bitterness is eclipsed by a light, non-lactic acidity and complex earthy funk; finishes very dry and crisp with a subtle, peppery phenol note.

Mouthfeel. Medium-light body with high carbonation that provides a lively, scrubbing texture; very low alcohol warmth; contains a light, pleasant fruit skin astringency that enhances the dry finish.
