PINTA Barrel Brewing

This monumental Imperial Stout presents a decadent tapestry of dark indulgence, shaped by nearly three years of meticulous maturation. The influence of Heaven Hill Bourbon provides a robust vanillic backbone, while Calvados and Banyuls casks introduce sophisticated notes of spiced apple and vinous dried fruit. Deep, earthy layers of Bolivia and Hispaniola Cocoa Beans meld seamlessly with the nutty warmth of freshly roasted Almonds. It is an intensely viscous experience where the high alcohol is masterfully integrated, offering a lingering, bittersweet finish of charred oak and dark chocolate. The result is a harmonious, liquid dessert of immense complexity and depth.

Appearance. Jet black and opaque (40+ SRM). Pours with a thick, deep tan head that shows moderate retention, leaving oily legs on the glass indicative of its 14% ABV and high viscosity.

Aroma. High intensity. Dominant aromas of bittersweet chocolate and toasted almonds are layered over a complex barrel profile of bourbon-soaked oak, vanilla, and subtle orchard fruits. Low esters of raisins and figs emerge from the vinous barrel influence. The malt character is deeply roasted, suggesting espresso and scorched sugar, with no perceptible hop aroma.

Taste. Massive initial impression of dark cocoa and marzipan. The mid-palate reveals rich malt flavors of black licorice and molasses, balanced by a firm roasted bitterness. The barrel blend adds layers of caramel, sweet apple, and a port-like quality. It finishes moderately sweet and long, with a harmonious interplay between the Bolivia and Hispaniola Cocoa Beans and the warming spirit character.

Mouthfeel. Full to very full-bodied with a luscious, velvety, and chewy texture. Carbonation is low, enhancing the beer’s syrupy viscosity. A significant, smooth alcohol warmth is present but remains well-integrated, avoiding any harshness or solvent notes.
