PINTA Barrel Brewing Nobility presents as a monolithic Imperial Stout, transformed by twenty-four months of maturation in Weller and Heaven Hill bourbon barrels. The extended aging weaves deep threads of charred oak, vanilla, and caramel through a dense tapestry of roasted malt. Hand-selected local roasted hazelnuts provide a distinct praline richness, while Kolumbia Tumaco cocoa nibs layer in a sophisticated dark chocolate depth. Expect a complex sensory journey where the aggressive roast of an Imperial Stout is softened by barrel-induced oxidation and nutty sweetness, resulting in a harmonious, velvety liquid with a lingering, warming finish of bourbon and toasted nuts.
Appearance. Jet black and completely opaque (40+ SRM). Pours with a thick, creamy, deep tan head that shows moderate retention. High viscosity is evident through slow-moving legs on the glass.
Aroma. Intense and complex. Rich layers of bittersweet chocolate and espresso roast are dominant, followed by a powerful bourbon bouquet of vanilla, toffee, and toasted oak from the Weller and Heaven Hill casks. The roasted hazelnuts contribute a fragrant, buttery nuttiness, while the Kolumbia Tumaco cocoa nibs add an earthy, dark cocoa character. Very low dark fruit esters of prune and fig.
Taste. Deeply impactful with an initial impression of dark chocolate ganache and roasted hazelnut. The mid-palate reveals the barrel influence with smooth bourbon warmth, caramel, and a touch of coconut. Malt flavors of burnt toast and black licorice provide a sturdy base. Bitterness is moderate to firm, effectively balancing the residual sweetness. The finish is long and complex, fading into lingering notes of cocoa and oaky tannins.
Mouthfeel. Full to very full-bodied with a luscious, chewy, and velvety texture. Carbonation is low, enhancing the creamy mouthfeel. A significant and smooth alcohol warmth is present but integrated, avoiding any harsh or solventy character.
