Iridesce (2023) presents as a sophisticated Brett Beer, showcasing the marriage of an eighteen-month aging process with the vibrant tang of organic rhubarb. The extended maturation period fosters a refined rustic complexity, layering notes of dried hay and earthy barnyard funk over a bright, acidic fruit core. The rhubarb lends a distinctive tartness reminiscent of under-ripe strawberries and citrus zest, which cuts through the wild yeast character. Highly attenuated and effervescent, the beer finishes exceptionally dry, leaving a lingering impression of lemon peel and stone fruit. It is a masterful display of balance between funky fermentation depth and clean, fruit-driven acidity.

Appearance. Luminous pale straw with soft pinkish-amber highlights from the rhubarb. Displays a slight, uniform haze with a fine-beaded, bright white head that shows moderate retention and delicate lacing.
