This Brett Beer presents a complex harmony between wild fermentation and barrel maturity. Having aged for nine months, the wild yeast contributes a sophisticated tapestry of rustic barnyard funk and overripe stone fruit, which elegantly intertwines with the rich, aromatic influence of the bourbon barrels. The addition of vanilla softens the wild edges, offering a creamy sweetness that balances the characteristic dry finish. Nuances of charred oak and a subtle bourbon warmth linger on the palate, while the moderate carbonation lifts the lighter-bodied structure, ensuring that the intricate layers of earthy funk and sweet spice remain vibrant and well-integrated.
Appearance. Deep golden to light amber (SRM 7-9) with a thin, fine-beaded off-white head that dissipates relatively quickly, leaving light lacing. A slight haze is present, characteristic of an unfiltered wild ale and extended wood aging.
Aroma. High intensity featuring a complex blend of earthy Brettanomyces funk, notably wet hay and leather, alongside fruity esters of dried apricot and peach. The bourbon barrel influence is assertive, providing rich vanilla bean, toasted oak, and a faint hint of marshmallow. Low bready malt serves as a background for the spirituous and wild aromas.
Taste. The palate opens with a light, non-lactic tartness and a flash of stone fruit. Malt flavors are minimal, yielding to a dry, wood-forward profile of toasted oak and creamy vanilla. The nine months of aging have introduced a pleasant rustic funk and subtle spiciness. Bitterness is very low, allowing the barrel tannins and bourbon character to provide structure. The finish is remarkably dry and crisp with a lingering bourbon warmth and vanilla sweetness.
Mouthfeel. Medium-light body with moderate to high carbonation that creates a crisp, lively mouthfeel. A gentle, well-integrated bourbon warmth is present, complemented by a slight creaminess from the vanilla infusion. Minimal astringency from the oak aging.
