This Brett Beer exhibits a sophisticated marriage of rustic funk and sharp fruitiness. The extended aging introduces nuanced notes of wet hay and aged leather, which provide a dry, earthy foundation for the bright, tart character of the gooseberries. These berries contribute a distinctively green, floral, and slightly acidic edge reminiscent of underripe grapes. The result is an exceptionally dry and refreshing wild ale that balances the wild-yeast-driven earthiness with a crisp, fruit-forward finish.
Appearance.Pale straw to light gold (4–6 SRM) with a persistent, slight haze. Features a thin, white, fizzy head with moderate retention and minimal lacing.
Aroma.Moderate to high intensity. Dominated by funky Brettanomyces traits including barnyard, damp hay, and a light earthiness. Complemented by the sharp, floral, and acidic scent of Polish Gooseberries, alongside subtle tropical fruit esters like pineapple.
