This sophisticated Wild Ale presents a masterclass in patient maturation, blending a three-year-old aged base with the elegant influence of Polish Riesling Grapes from the Silesian Winery. The sensory profile is defined by a complex interplay of aged Brettanomyces character—evoking notes of wet hay, leather, and soft earth—and the vibrant, vinous acidity of the grapes. Expect a bouquet of white peach, floral jasmine, and mineral lime zest. On the palate, the beer is remarkably dry and effervescent, showcasing a crisp, wine-like structure with a lingering, stony finish that reflects its dual heritage of craft brewing and enology.

Appearance. Deep straw to pale gold (4–6 SRM). Pours with a fine-beaded, white head that shows moderate retention. Moderate clarity with a faint, crystalline shimmer characteristic of aged wild ales.

Aroma. High intensity and layered. Prominent Brettanomyces funk featuring barnyard, horse blanket, and aged leather. These are brightened by distinct Riesling grape aromatics: green apple, apricot, and a hint of mineral petrol. Subtle floral notes of honeysuckle and a touch of oak.

Taste. Sharp, clean initial impression of white wine acidity. The mid-palate reveals layers of stone fruit and citrus zest, balanced by an earthy, spicy fermentation character. Malt presence is minimal, appearing only as a faint crackery backbone. Bitterness is low, allowing the tart, vinous quality to dominate. Finishes bone-dry with a clean, lingering mineral aftertaste.

Mouthfeel. Medium-light body with a prickly, champagne-like carbonation. The 7.5% alcohol provides a gentle, well-integrated warmth. Mouth-watering acidity is present without being harsh, accompanied by a very slight grape-skin tannin astringency.
