PINTA Barrel Brewing Cherish presents a sophisticated sensory journey, blending a three-year-old wild ale base with a vibrant six-month infusion of fresh Polish Nadwiślanka cherries. This Brett Beer exhibits an exquisite balance between the rustic, earthy funk of aged Brettanomyces—reminiscent of wet hay and leather—and the intense, bright acidity of the dark fruit. The cherries contribute a deep stone fruit character with hints of almond-like complexity from the pits. Brilliantly dry and highly attenuated, the profile is lifted by a lively carbonation that carries the tart cherry notes and subtle oak tannins through to a crisp, lingering finish.

Appearance. SRM 20–24. Deep ruby-red to garnet hue with a slight haze from the fruit and yeast. Topped with a pink-tinted, fine-beaded head that shows moderate retention and delicate lacing.

Aroma. High intensity. Explosive aromatics of fresh, tart cherries and cherry pits (almond-like) dominate. Beneath the fruit, three years of aging reveals complex funk: wet hay, horse blanket, and a slight leathery quality. Very low malt aroma and no hop character.

Taste. Initial impression is sharp and refreshing with an intense cherry tartness. The flavor follows the aroma with deep stone fruit and rustic, earthy Brettanomyces character. Malt flavor is minimal, providing a neutral backdrop for the fruit and funk. Bitterness is very low. The finish is bone-dry and crisp with a lingering cherry-skin acidity.

Mouthfeel. Medium-light body with high, effervescent carbonation that creates a prickly sensation on the tongue. Low alcohol warmth is well-integrated. A light tannic astringency from the fruit skins and oak aging adds structure.
