This 2023 vintage Wild Ale presents a sophisticated harmony between three years of Brettanomyces maturation and six months of conditioning on Polish Łutówka cherries. The extended aging yields a complex bouquet of rustic funk, aged leather, and barnyard notes that intertwine with the vibrant, tart character of the fruit. Expect a vivid sensory journey where the deep cherry presence provides both a bright acidity and a structural tannin, while the bone-dry finish highlights the highly attenuated nature of the base beer. It is an elegant expression of time and fruit, balancing wild earthy depth with refreshing red-fruit intensity.
Appearance. Deep ruby to burgundy with a garnet hue. Persistent, fine-beaded pinkish foam that leaves light lacing. Slight haze is present from the wild yeast and fruit particulates.
Aroma. High intensity. Dominated by pungent tart cherry, almond-like cherry pits, and a complex Brettanomyces profile of wet hay, leather, and mild horse blanket. Subtle spicy phenols and a hint of aged wood; no diacetyl or harsh solvent notes.
Taste. Initial sharp tartness from the Łutówka cherries followed by a wash of earthy, funky Brett character. Malt is a supporting player, offering low cracker-like notes. Hop bitterness is very low, with most structure provided by fruit tannins and acidity. The finish is exceptionally dry and lingering, with a clean, acidic snap.
Mouthfeel. Medium-light body with high, effervescent carbonation that lightens the palate. Very low astringency from the fruit skins. Alcohol warmth is negligible, contributing to a crisp and highly drinkable texture.
