This complex Brett Beer showcases a masterful balance between orchard fruit and seasoned oak. Following nine months of maturation, it presents a vivid sensory profile where succulent apricots are intertwined with the rustic charm of wild fermentation. Distinctive notes of wet hay and mild earthy funk from the Brettanomyces meld seamlessly with the underlying warmth of bourbon barrels, which contribute sophisticated whispers of vanilla and toasted coconut. The overall character remains fruit-forward yet structurally dry and vinous, allowing the bright, stone-fruit sweetness to be tempered by a sophisticated barrel-aged depth and a crisp, clean finish.

Appearance. Deep golden to amber-orange in color (8-12 SRM) with a persistent moderate haze from the apricot addition. Pours with a thin, off-white head that shows moderate retention and light lacing.

Aroma. High intensity with a dominant bouquet of jammy apricots and stone fruit. Moderate funk manifests as wet hay and earthy leather, typical of a matured Brettanomyces profile. The bourbon barrel influence provides secondary notes of vanilla, toasted oak, and a faint spiritous warmth, while hop aroma is absent.

Taste. The initial impression is defined by sharp, tangy apricot flesh and skin. This is followed by a dry, rustic mid-palate featuring hay-like funk and a light, non-lactic acidity. Bourbon barrel aging adds structural complexity through vanilla and woody tannins. Bitterness is very low, leaving the balance to favor the fruit and fermentation character. The finish is remarkably dry and crisp, with a lingering vinous aftertaste of dried fruit and oak.

Mouthfeel. Medium-light body with a highly attenuated, lean texture. Carbonation is moderate-to-high, providing a lively and prickly sensation on the tongue. A gentle, well-integrated alcoholic warmth is present, accompanied by a light tannic astringency from the fruit skins and wood barrels.
