On the palate, the cider showcases a firm tannic structure typical of Somerset fruit, providing a grippy texture that evolves into a clean, lingering dryness. Its elegant carbonation and medium-full body reflect a decade of craft, resulting in a refined, rustic profile that celebrates the pure essence of the orchard.

Appearance. Deep golden to light amber. Brilliant clarity with a thin, fast-fading white collar and fine, persistent effervescence.

Aroma. High intensity apple aroma with rich, bittersweet character. Notes of ripe, bruised apples, subtle leather, and earthy cellar funk. No significant volatile acidity or sulfur presence.

Taste. Initial punch of concentrated apple skin and cooked fruit. Mid-palate reveals firm, drying tannins and a moderate acidity that provides structure. Despite the keeved origin, the finish is distinctly dry and clean, with a lingering bittersweet apple aftertaste and a touch of rustic spice.
