Pilton Cider Three Cherries
This Specialty Cider showcases the rich, artisanal complexity of Pilton’s signature keeved cider base, infused with the vibrant depth of Black cherries and the sharp citrus of crushed limes. The keeving process preserves a lush, natural sweetness and a robust apple character that serves as a canvas for the dark, jammy stone fruit notes. The addition of lime provides a bright, acidic counterpoint to the velvet-like body, lifting the profile and preventing the residual sugars from becoming cloying. It is a harmonious marriage of traditional Somerset cidermaking and bold, contemporary fruit additions, resulting in a deeply layered and refreshing experience.
Appearance. Deep ruby-copper with brilliant clarity and a lively, effervescent pour; the head is a fleeting, pink-tinted foam that leaves a fine ring of lacing.
Aroma. High intensity with a complex bouquet of ripe bittersweet apples, prominent black cherry skin, and a sharp, zesty lime accent. Subtle notes of almond and earthy orchard floor add depth to the fruit-forward nose.
Taste. An initial impression of rich, juicy sweetness from the keeved apple base is quickly met by the tart, vinous character of black cherries. The mid-palate features a refreshing lime acidity and a mild tannic grip from the apple skins. It finishes semi-sweet and clean, with a lingering echo of dark fruit and citrus zest.
Mouthfeel. Medium-full body with a rounded, slightly viscous texture typical of keeved ciders; moderate carbonation provides a prickly, refreshing lift. Very low astringency and no noticeable alcohol warmth.

The starting point, as the name suggests was cherries – 250kg of grade A dessert cherries from Haygrove Farms in Ledbury for each of us. The simple idea? To take this wonderful fruit back to our respective cideries and create something magical. Now, after almost a year it’s time for the big reveal. 750ml. 5%.
