This barrel-fermented Specialty Cider offers a sophisticated sensory experience, blending the rich, honeyed character of a traditional keeved fermentation with the complex influence of Scotch whisky barrels. A vibrant aroma of ripe bittersweet apples leads the profile, intertwined with subtle notes of toasted oak, vanilla, and a faint whisper of peat smoke. On the palate, a lush, concentrated apple sweetness is artfully counterpointed by a firm tannic astringency and a mellow spirituous twang. The finish is long and warming, displaying a harmonious balance between orchard fruit and the weathered character of the oak, creating a deeply textured and evocative profile.

Appearance. Deep golden to amber with brilliant clarity. Pours with a fine-beaded, short-lived white mousse that leaves a light, delicate collar.

Aroma. High intensity apple aroma, evoking baked apples and skins. Noticeable oak presence with hints of vanilla and a distinct but mellow Scotch whisky peatiness. Low spicy phenols and light buttery notes from barrel maturation.

Six month smokey barrel aged keeved cider.

This batch of keeved cider was spotted as being something different way back in the winter of 2020. With complex fruit and delicate balance it stood out as being worth particular attention to become a special product. It was first left to ferment with a succession of wild yeasts in tank for six months, then transferred to delicately smoked second-use whisky barrels for the same amount of time.

A briny sea blast through the smouldering embers of an orchard peat fire. Confident rounded tannins, soft delicate fruity sweetness and mature acidity on the finish.
