This vintage English cider highlights the heritage apples Tremlett's Bitter and Brown's Apple, grown in Haselbury Plucknett. Fermented with the non-traditional yeast Metschnikowia pulcherrima, it undergoes a complex maturation in Burgundy and Rum barrels. The result is a sophisticated sensory experience, opening with a rich caramel aroma and transitioning into a smooth, white-wine-like texture. The palate is defined by delicate tannins and a balanced acidity, offering an off-dry profile that lingers with a long, reflective finish. Presented still, it captures the essence of a Somerset orchard with the nuanced depth of oak and spirit maturation.

Appearance. Deep gold to copper with brilliant clarity. As a still cider, there is no foam, head, or carbonation visible.

Aroma. High intensity with prominent notes of caramel and rich, baked apples. The maturation in Burgundy and Rum barrels contributes subtle vanilla, toasted oak, and a faint vinous character. The Metschnikowia pulcherrima yeast adds a unique, slightly earthy and floral fermentation bouquet.

Taste. The initial impression is of ripe cider apples with a balanced off-dry sweetness. Complex fruit flavors from the Tremlett's Bitter provide structure, while the Brown's Apple imparts a refreshing, integrated acidity. Malt-like caramel notes from the wood maturation blend with light rum spice. The finish is very long and clean, with a gentle, lingering tannic grip.

Mouthfeel. Medium body with a smooth, silk-like texture reminiscent of a full-bodied white wine. Carbonation is absent. Alcohol warmth is light and well-integrated. Delicate tannin-induced astringency provides a pleasant, drying structure.

Pilton are artisan producers at the heart of Somerset's ‘cider-land’ making whole juice, sparkling cider by the old English method of keeving. Apples are collected from traditional cider orchards in and around the parish of Pilton, and slowly transformed from this full flavoured fruit into unique naturally sweet ciders. Finally, different yeasts and other fruits are weaved in and barrel‑aging techniques are used to create a variety of small batch drinks. Pilton Cider are based in Shepton Mallet.
