Appearance. Deep golden to amber-orange; clear to slight haze; minimal, short-lived white head; still to very low carbonation.
Aroma. High intensity; prominent cooked Seville orange marmalade and caramelized sugar; secondary notes of herbal bay, rosemary, and resinous juniper; subtle wood smoke and earthy yeast esters; faint Jamaican rum and oak undertones.
Taste. Initial rich apple and honeyed sweetness from keeving; sharp, bright citrus acidity; mid-palate of roasted orange pith and spicy herbs; distinct cider tannins provide a drying, structured counterpoint; finish is long with a balance of residual sugar and herbal bitterness.
