This Lemon Sour IPA presents a vibrant, refreshing profile defined by sharp citrus and complex fermentation. The aroma leads with high intensity, offering zesty lemon and bright, tropical hop notes that suggest a blend of New World varieties. A distinct lactic acidity provides a clean, tart backbone, harmonizing with subtle funky esters typical of a wild fermentation. The palate is dominated by a citrus-forward tartness that mimics fresh lemon juice, balanced by a light, bready malt presence. A restrained but present hop bitterness cuts through the acidity, leading to a crisp, dry finish with lingering citrus zest and a refreshing, puckering sensation.

Appearance. Pours a pale, hazy straw color (3-4 SRM). A moderate, white frothy head forms initially but fades quickly to a thin ring, exhibiting moderate lacing typical of acidic styles. Hazy to opaque due to hop and fruit additions.

Aroma. High intensity. Punchy aromas of fresh lemon zest and lemon curd dominate, intertwined with tropical and citrus hop character. A clean, lactic sourness is present, alongside subtle earthy funk and floral esters from the wild yeast. Malt is low, appearing as a faint crackery note.

Taste. The initial impression is sharply tart and citrus-forward. Bold lemon flavors meld with tropical fruit hop notes. Bitterness is moderate, providing a structure that balances the sourness without becoming harsh. The malt is light and bready, serving only to support the fruit and hops. Fermentation character is clean but complex with a light wild funk. Finishes very dry and refreshing with a lingering lemon peel aftertaste.

Mouthfeel. Medium-light body with high carbonation that creates a prickly, effervescent sensation. Alcohol warmth is negligible. A slight puckering acidity is present, though astringency is low. Very crisp and highly drinkable.
