This delicate Wild Specialty Beer presents a refreshing interplay between a simple malt foundation and vibrant fruit additions. The aroma is defined by a bright burst of sun-ripened strawberry and the tropical, slightly floral tang of kiwi, seamlessly integrated with a clean, lactic acidity. On the palate, the delicate malt provides a soft, crackery backdrop that allows the fruit juice to shine without being cloying. The wild fermentation lends a subtle complexity, though the focus remains on the crisp, tart harmony of the berries and kiwi. It finishes exceptionally dry and effervescent, leaving a lingering impression of fresh fruit skin and a zesty, thirst-quenching bite.
Appearance. SRM 4-7; Pale gold with a distinct soft pink to ruby tint from the strawberry. Clarity is slightly hazy with a white to light-pink head that shows moderate to low retention.
Aroma. High intensity fruit aromatics of jammy strawberry and zesty, green kiwi. A moderate lactic sourness provides a sharp, clean edge. Malt presence is low, offering a hint of white bread or raw grain. Hop aroma is absent.
Taste. Initial impression is a sharp, refreshing tartness. Pronounced flavors of fresh strawberry and tangy kiwi dominate. A delicate malt backbone of wafer and light grain balances the acidity. Hop bitterness is very low. The finish is dry and crisp, with lingering fruit tartness and a clean, acidic aftertaste.
Mouthfeel. Medium-light body with high, prickly carbonation that enhances the perceived acidity. Alcohol warmth is non-existent. There is a very slight fruit-derived astringency that contributes to the refreshing finish.
