This Wild Specialty Beer offers a vibrant sensory tribute to the classic Peach Melba dessert. A lush bouquet of ripe peach and tangy raspberry dominates the nose, softened by a delicate, creamy thread of vanilla. On the palate, the stone fruit and berry notes dance against a clean, refreshing lactic acidity, while the vanilla provides a smooth sensation reminiscent of ice cream that rounds out the tartness. Despite the dessert inspiration, the finish remains crisp and approachable at a sessionable strength. The interplay between the bright fruit acidity and the velvety vanilla creates a balanced, multi-layered profile that is both nostalgic and sophisticated.

Appearance. Pours a soft, hazy coral-pink or pale orange (4-7 SRM). Topped with a short-lived, pink-tinted head that leaves minimal lacing due to fruit oils and acidity.

Aroma. High intensity aromatics of fresh, fuzzy peach and jammy raspberry. A prominent, sweet vanilla bean character provides a dessert-like quality, supported by a clean, lactic sourness and very low bready wheat malt notes. No hop aroma.

Taste. Initial impression is a bright, tart burst of raspberry and stone fruit. The middle presents a balanced interplay between the refreshing fruit acidity and a perceived creaminess from the vanilla. Low bitterness (sub-10 IBU context) allows the wild fermentation character to shine. The finish is clean and dry, with a lingering aftertaste of peach skins and sweet cream.

Mouthfeel. Medium-light body with moderate to high carbonation that enhances the refreshing qualities of the fruit. Features a noticeable smoothness from the vanilla addition, with no alcohol warmth and very low fruit-derived astringency.

A modern Scottish fruited sour ale from Pilot Beer in Leith, Edinburgh, inspired by the classic Peach Melba dessert, so you get a deliberate mix of stone fruit sweetness, berry sharpness, and vanilla creaminess rather than a purely acidic sour beer.

In the glass it pours a slightly hazy pale peach-pink, with an aroma that leans straight into ripe peach, raspberry coulis and soft vanilla cream. The fruit character is immediate and very expressive, almost dessert-like rather than sharply acidic.

On the palate it sits in a very approachable sweet-sour balance. The first impression is juicy peach and soft tropical stone fruit, quickly followed by bright raspberry tartness that lifts everything and prevents it from becoming heavy. The vanilla adds a round, creamy edge that smooths the acidity and gives it that “melba dessert” character rather than a sharp Berliner Weisse style bite.
