DDH Hopfair is a vivid Double IPA that showcases an intensive collaboration between Yakima Chief Hops and Phantasm. The sensory profile is dominated by a high-intensity hop punch featuring the signature tropical and citrus notes of Citra, the complex berry and stone fruit qualities of Mosaic, and the grounding resinous pine of Simcoe. The addition of Phantasm powder elevates the tropical thiol-derived aromatics, pushing notes of passionfruit and Sauvignon Blanc grape to the forefront. Supported by a lean, neutral malt backbone, the beer finishes dry with a firm bitterness, balancing its strength with remarkable drinkability and aromatic depth.

Appearance. SRM 7; pale gold to light orange-copper with a slight haze consistent with heavy dry-hopping. Displays a moderate-sized, persistent, white head with excellent lacing.

Aroma. High intensity hop aroma. Pronounced tropical passionfruit, mango, and grapefruit from Citra and Phantasm, layered with Mosaic's distinctive blueberry and Simcoe's earthy pine. Clean, neutral, grainy malt provides a subtle background; low fruity esters.

Taste. Strong, complex hop flavors mirroring the aroma with heavy grapefruit zest, ripe tropical fruit, and resinous pine. Moderately high bitterness that remains smooth rather than harsh. Low supportive neutral malt character. Finish is dry with a lingering hoppy and clean bitter aftertaste.

Mouthfeel. Medium body with a smooth, soft texture. Moderate carbonation. Restrained, smooth alcohol warmth is present but well-integrated, lacking any hop-derived astringency.
