Phase Three Brewing’s DDH Cross Pollination is a vibrant Double IPA that showcases an intensive double dry-hop of Citra. The sensory experience is led by a powerful aromatic burst of grapefruit peel, lime zest, and lychee. The addition of orange blossom honey lends a delicate floral perfume and a subtle nectar-like sweetness that bridges the gap between the aggressive hops and the clean, neutral malt base. It pours with a soft gold hue and a dense white head. On the palate, the Citra hops deliver layers of tropical fruit and citrus oils, finishing with a firm, well-integrated bitterness and a drying, floral lift from the honey.
Appearance. Pale gold to light orange (6-8 SRM) with a slight haze from the heavy double dry-hopping. Features a moderate-sized, persistent, off-white head with excellent lacing.
Aroma. Intense hop aroma dominated by Citra’s signature notes of grapefruit, passion fruit, and bright citrus zest. A distinct floral layer from the orange blossom honey adds complexity, resembling wild clover and citrus bloom. Malt is very low and neutral, providing a clean canvas. Fermentation is clean with very light fruity esters.
Taste. The initial impression is a flood of tropical and citrus hop flavors, specifically mango and orange peel. The orange blossom honey provides a unique floral mid-palate and a light, honeyed sweetness that never becomes heavy. Bitterness is high but smooth, lacking any vegetal harshness. The finish is medium-dry and crisp, with lingering notes of grapefruit pith and floral honey.
Mouthfeel. Medium body with a smooth, almost creamy texture. Carbonation is medium-high. A light, refined alcohol warmth is present at 8% ABV, but remains well-integrated and smooth without astringency.
