The addition of Saigon cinnamon adds a warm, spicy counterpoint to the thick, chocolate-forward malt base. Expect an intense interplay of charred oak and vanilla from the long maturation period, balanced by a powerful yet smooth alcohol presence. It is a viscous, indulgent experience where the dark malt roast and sweet pastry-like adjuncts harmonize into a complex, lingering finish.
Appearance. Jet black and completely opaque (SRM 40+). Pours with a thick, dense, dark tan head that shows moderate retention, leaving oily legs on the glass as it recedes.
Aroma. High intensity and complex. Dominant notes of rich dark chocolate and creamy toasted coconut are layered with the woody spice of Saigon cinnamon. A strong bourbon barrel influence contributes aromas of vanilla, caramel, and charred oak, with light background esters of dark cherry.
Taste. Intensely flavored with an initial impression of sweet chocolate and tropical coconut. The Ghana cocoa nibs provide a bittersweet chocolate depth, while Saigon cinnamon offers a spicy mid-palate complexity. Robust malt flavors of espresso and burnt toast support the adjuncts. Bitterness is moderate but balanced by significant residual sweetness and wood tannins. The finish is long and indulgent with bourbon-soaked oak and vanilla.
Mouthfeel. Full to very full-bodied with a viscous, chewy, and velvety texture. Carbonation is low to moderate. Significant alcohol warmth is present but remains smooth and well-integrated without harshness.
