Wishing Well is a vibrant Double IPA that showcases an expressive Southern Hemisphere hop profile. The aromatic intensity is driven by Nelson Sauvin, Motueka, and Peacharine, delivering a complex bouquet of crushed white grapes, zesty lime, and lush, sun-ripened stone fruit. On the palate, the high-alpha bitterness is harmonized by a lean, clean malt backbone that allows the tropical and vinous hop characters to remain front and center. Despite its 8% ABV, the beer maintains high drinkability with a dry finish and a lingering essence of peach and gooseberry, capturing a modern, fruit-forward interpretation of the style.
Appearance. Pours a deep gold to light orange with a moderate-sized, persistent off-white head that leaves delicate lacing. Clarity ranges from a soft, modern haze to opaque, typical of contemporary heavily dry-hopped versions.
Aroma. Prominent and intense hop aroma featuring distinct notes of white grape and gooseberry from Nelson, bright lime zest from Motueka, and a heavy presence of sweet peach from the Peacharine. Background notes include subtle tropical melon and a clean, neutral grainy malt sweetness with a light fruity fermentation profile.
Taste. Initial impression is an explosion of tropical and stone fruit. Strong hop flavors of ripe peach, passion fruit, and citrus lime dominate. The malt character is low to medium, providing a soft, unobtrusive support. Bitterness is firm and moderately high but smooth, leading into a dry to medium-dry finish. The aftertaste is long and hoppy, emphasizing the unique New Zealand hop terroir.
Mouthfeel. Medium-bodied with a smooth, velvety texture. Carbonation is moderate to medium-high, providing a crispness that cuts through the hop oils. A restrained and smooth alcohol warmth is present but well-integrated, with no harsh hop-derived astringency.
