Echoes is a sophisticated Wild Specialty Beer that showcases a vibrant interplay between mixed-culture fermentation and a heavy fruit presence. Deep layers of blackberry and blackcurrant drive a musky, forest-berry profile, while pomegranate contributes a vinous, slightly tannic structure. The addition of plum provides a fleshy, stone-fruit sweetness that is quickly countered by the bright, zesty acidity of lemon. The wild fermentation character is evident throughout, offering rustic barnyard funk and a sharp lactic bite that harmonizes with the intense fruit additions. It concludes with a refreshing, bone-dry finish where the tartness of the berries and citrus lingers elegantly.
Appearance. Deep ruby-purple with a hazy to opaque clarity; pours with a moderate, pinkish-white head that shows fair retention and leaves light lacing on the glass.
Aroma. High intensity of dark fruit, specifically jammy blackberry and musky blackcurrant, alongside a notable sharp lactic tartness. Complex secondary notes of earthy funk, leather, and a bright citrus lift from the lemon are present, with virtually no hop or malt aroma.
Taste. A sharp, clean lactic acidity leads into an explosion of dark fruit flavors. Blackberry and blackcurrant dominate the mid-palate, followed by the dry, tannic snap of pomegranate and the richness of plum. The lemon provides a high-toned citric punch that enhances the perceived sourness. Malt is a minimal, neutral background player. The finish is exceptionally dry and tart, with a lingering earthy funk and berry skin astringency.
Mouthfeel. Medium-light body with moderate to high carbonation that creates a crisp, effervescent sensation. A light alcohol warmth is present at 6.8% ABV, accompanied by a slight puckering astringency from the fruit tannins.
