This English Cider showcases a youthful, fruit-forward profile driven by the harmonious blend of Redstreak and Dabinett apples. The nose offers an inviting bouquet of ripe orchard fruit with subtle spicy and earthy undertones characteristic of these traditional bittersweet varieties. On the palate, a lush sweetness balances the firm, structured tannins of the Dabinett, while the Redstreak provides a bright, refreshing acidity. The finish is lingering and rich, emphasizing a pure expression of single-orchard fruit with a delicate, drying astringency that masterfully rounds out the initial sweetness.

Appearance. Luminous medium gold to light amber in color with brilliant clarity. Pours with a fleeting, fine-beaded white head that dissipates quickly, leaving a clean surface typical of traditional English cider.

Aroma. High intensity of fresh, ripe apple juice and cooked pomme fruit. Notable spicy phenols and earthy, floral notes derived from the Redstreak and Dabinett blend. Subtle yeast-derived esters of pear and apricot emerge as the cider warms, with no sulfur or acetic flaws.

Taste. Initial impression is of rich, honeyed sweetness followed immediately by robust apple flavors.
