After three years in Wild Turkey Rare Breed and Weller Bourbon barrels, the base Imperial Stout has transformed into a viscous masterpiece. Deep layers of espresso and dark cocoa merge with the sweet, creamy influence of lactose, while the extended aging imparts profound notes of toasted oak, spicy rye, and rich vanilla. The palate is treated to a harmonious blend of dark fruit esters and charred malt, concluding with a persistent, warming bourbon finish. It is a masterclass in balance between adjunct intensity and barrel character in a Spice, Herb, or Vegetable Beer.
Appearance.SRM 40+; midnight black and completely opaque. Pours with a thick, creamy, deep-tan head that exhibits excellent retention and leaves heavy, oily lacing on the glass.
Aroma.High intensity. Dominant freshly roasted coffee and dark chocolate. Prominent bourbon-barrel notes including vanilla, caramel, and charred oak. Subtle dark fruit esters of plum and black cherry merge with a hint of spicy rye from the barrel wood.
Taste.Initial impression of rich espresso and bittersweet chocolate. The middle palate reveals complex bourbon character, featuring vanilla bean, toasted coconut, and a touch of oak tannins, all softened by a lactose-driven creaminess.
