Penyllan Freya (Vintage 2015) is an extraordinary, complex blend of a dark Trappist ale and a traditional milk stout, matured for two years in cognac barrels. Pouring almost black with rich chestnut highlights and a delicate tan head, it offers an alluring aroma of dark chocolate, espresso, and warming vanilla. The palate unfolds with deep flavors of cocoa, tobacco, and roasted coffee, beautifully contrasted by tart sour cherries, burnt sugar, and a balsamic-like sweetness. Despite its strength and lactose-derived body, a bright acidity cuts through, delivering a surprisingly crisp, refreshing, and dry finish.
Appearance.Almost black in color with warm chestnut highlights when held to the light. Crowned by a low, tan head with moderate retention that leaves light lacing.
