This Wild Specialty Beer offers a vibrant sensory journey inspired by the classic dessert it is named after. The profile is dominated by a massive addition of fresh raspberries, expertly balancing the sharp, refreshing lactic acidity of a kettle sour with an evocative pastry-like sweetness. The aroma is saturated with jammy fruit and subtle hints of a biscuit-like malt presence. On the palate, the intense raspberry tartness is rounded out by a velvety, fuller body than typical sour styles, mimicking the crust and filling of a raspberry pie. It finishes with a harmonious blend of lingering fruit skin and a clean, mouth-watering zest.

Appearance. Deep, opaque ruby-red to magenta in color (SRM 25+). The beer is topped with a dense, pink-tinted head that shows moderate retention and leaves light lacing. Visible haze is present due to the heavy use of fruit and pastry-style adjuncts.

Aroma. High intensity aromatics of fresh and jammy raspberries. Malt flavors provide a doughy, graham-cracker-like base. The finish is medium-sweet with lingering berry tartness and a clean, refreshing aftertaste. Bitterness is virtually absent.
