This Imperial Stout, a collaboration with Caleya, presents an indulgent sensory profile defined by its 9.6% ABV and significant cacao addition. Deeply roasted malts provide a foundation of bittersweet chocolate, espresso, and subtle toasted bread, while the cacao intensifies the dark chocolate richness throughout the experience. Dark fruit esters reminiscent of raisins and figs emerge alongside a moderate hop presence that balances the heavy malt sweetness. The experience is notably viscous and warming, culminating in a complex, bittersweet finish where the interplay of roasted grains and pure cocoa nibs lingers elegantly on the palate with a velvety persistence.
Appearance. Jet black and completely opaque; features a thick, long-lasting, deep tan head with dense lacing. High viscosity is apparent as legs form on the glass.
Aroma. High intensity with a dominant rich dark chocolate and raw cocoa character. Strong roasted notes of espresso and burnt grain are complemented by moderate esters of dried plums and raisins. A smooth, clean alcohol warmth is present alongside a low, earthy hop aroma.
Taste. An intense initial impression of bittersweet chocolate and heavily roasted coffee. The malt profile is complex, featuring layers of toast, caramel, and black licorice. The cacao addition provides a distinct, earthy chocolate depth. Bitterness is firm and assertive, balancing the residual malt sweetness. The finish is long and warming with lingering notes of dark chocolate and roasted grain.
Mouthfeel. Full-bodied and chewy with a velvety, luscious texture. Carbonation is low to moderate, providing just enough lift to the heavy body. A noticeable, smooth alcohol warmth is present without being sharp or solventy.
