Península / Edge Brewing Quake
This Hazy IPA, a collaboration between Península and Edge Brewing, utilizes a Norwegian Kveik yeast strain to amplify a lush, tropical profile. The sensory experience is dominated by the interplay of Simcoe, Mosaic, and Columbus hops, delivering layers of ripe stone fruit, blueberry, and bright citrus. The Kveik fermentation contributes subtle orchard fruit esters that complement the juicy hop character. It presents a soft, pillowy texture and a deliberate haze, characteristic of the style, with a restrained bitterness that allows the vibrant hop oils and bready malt backbone to remain front and center through a clean, fruity finish.
Appearance. Straw to light gold (4-6 SRM) with a deep, opaque haze and a luminous shine. It supports a dense, rocky, meringue-like white head with excellent retention and significant lacing.
Aroma. High intensity aromatics lead with ripe mango, passion fruit, and pine from the Simcoe and Mosaic, while Columbus adds a slight dank, herbal undertone. The Kveik yeast provides a unique fruity ester profile reminiscent of orange peel. Malt is low, presenting as soft white bread or grainy sweetness.
Taste. An immediate burst of tropical fruit and citrus juice. Simcoe provides notes of apricot and pine, while Mosaic contributes complex berry and melon flavors. Low to medium-low bitterness is well-integrated and never harsh. The malt flavor is neutral and bready, supporting an off-dry, juicy finish with lingering fruit notes and no cloying sweetness.
Mouthfeel. Medium-full body with a soft, silky, and rounded texture. Carbonation is moderate. Despite the 5.8% ABV, the fermentation ensures a clean profile with virtually no alcohol warmth, maintaining high drinkability without any astringency or raw starchiness.
