The cassis cider base drives a sharp, tart fruit character that balances the higher alcohol content. Bottle refermentation ensures a lively, effervescent mouthfeel that cleanses the palate, finishing bone-dry with lingering fruit skins and earthy, wild nuances typical of a sophisticated fruit-and-wine hybrid.
Appearance. Deep ruby to dark purple with brilliant clarity; pours with a fine, pink-tinted head that shows moderate retention and light lacing.
Aroma. High intensity; pungent blackcurrant dominates, supported by vinous esters of cherry and plum from the Pinot Noir and earthy, spicy notes from the Dornfelder. Subtle floral and stone fruit hints from the Chardonnay provide complexity.
Taste. Assertive tartness and fruit-forward intensity. Initial flavors of concentrated cassis give way to complex red wine tannins and a light citrusy lift.
