This refreshing Wild Specialty Beer is a vibrant, South-Asian inspired tart ale designed for peak summer sessionability. It centers on a distinctive interplay between Kokum and Calamansi, offering a bright, pithy acidity that diverges from more common lactic-forward sours. The profile is dominated by sharp citrus zest and exotic tropical tartness, supported by a lean malt backbone. On the palate, the Calamansi provides a lime-like brightness, while the Kokum adds a deeper, slightly earthy sourness. At a light 4% ABV, it finishes crisp and bone-dry, with a lingering, pleasant pithiness that enhances its thirst-quenching, zesty character.

Appearance. Pours a pale straw to light gold (3-5 SRM) with a slight, natural haze. The brilliant white head is fizzy and dissipates quickly, leaving minimal lacing, which is common in high-acid tart ales.

Aroma. High intensity aromatics of sharp citrus zest and exotic fruit. Distinctive notes of Calamansi provide a cross between lime and sour orange, while the Kokum adds a unique, tangy, and slightly savory fruity depth. Malt presence is nearly absent; fermentation is clean with very subtle funky esters.

Taste. Initial impression is briskly tart and refreshing. Dominant flavors of zesty Calamansi peel and acidic Kokum pulp drive the profile. Malt flavor is very low, providing minimal cracker-like structure. Bitterness is negligible, as the pithy tartness provides the primary balance. The finish is bone-dry and clean with a lingering citrus-pith aftertaste.

Mouthfeel. Light-bodied and effervescent with high carbonation that provides a sharp, scrubbing sensation on the palate. Alcohol warmth is non-existent. There is a very slight, pleasant astringency from the fruit pith that contributes to the overall dry perception.
