This Wild Specialty Beer is a nostalgic, sensory exploration of dark berries and mixed-culture fermentation. Inspired by the classic Vimto cordial, it delivers intense layers of jammy blackcurrants, tart raspberries, and vinous grape notes. The wild fermentation provides a rustic backdrop of earthy funk and sharp lactic acidity that cuts through the rich fruit profile. While the deep purple hue and persistent pink foam suggest sweetness, the palate remains remarkably dry, as the sugars from the grapes and berries have been fully transformed by the yeast, leaving behind a complex, puckering finish with subtle tannic structure and a refreshing, vinous character.

Appearance. Deep ruby to royal purple with a vibrant, pink-tinted head that shows moderate retention. The body is hazy to opaque due to the heavy fruit addition and wild yeast suspension.

Aroma. High intensity aromatics of concentrated blackcurrant and ripe raspberry, complemented by a vinous, grape-like character. Secondary notes include a sharp lactic tang and subtle earthy funk typical of wild fermentation, with a faint, spicy medicinal hint reminiscent of mixed-berry cordials.

Taste. The initial impression is a sharp, refreshing acidity followed by an explosion of dark fruit. Dominant flavors of tart blackcurrant and zesty raspberry lead into a drier, grape-skin middle. Hop bitterness is negligible, allowing the acidic profile to provide balance. The finish is very dry and clean, with lingering notes of berry skins and a mild wild funk.

Mouthfeel. Medium-light body with a prickly, high carbonation that enhances the perceived acidity. A slight tannic astringency from the grape and blackcurrant skins provides structure, while the finish is crisp without any cloying sweetness.
