Pastore Brewing and Blending

Pastore’s Semifreddo is a vibrant Wild Specialty Beer that captures the essence of the Italian dessert through a complex layering of fruit and confectionary notes. Intense aromas of ripe cherries and jammy plums are complemented by a distinct almond-like nuttiness from amaretti and a smooth, aromatic vanilla bean sweetness. The palate offers a refreshing lactic tartness that balances the rich fruit profile and the lingering biscuit-like character. This 4% pastry sour maintains a light yet creamy presence, where the wild fermentation provides a crisp, clean finish despite the dessert-inspired additions, creating a sophisticated harmony between tangy wild character and dessert-style sweetness.

Appearance. Deep ruby to pinkish-purple hue (10-15 SRM). Topped with a short-lived, light pink head with poor retention. Noticeably hazy with a dense, opaque quality from the fruit and pastry additions.

Aroma. High intensity. Dominant notes of dark cherry skins and macerated plums. Secondary layers of sweet vanilla and a marzipan-like nuttiness from the amaretti biscuits. Very low bready malt and a clean, sharp lactic acidity with a faint, earthy wild fermentation character.

Taste. Initial impression is a sharp, clean lactic sourness, quickly followed by juicy plum and tart cherry flavors. The mid-palate reveals a creamy vanilla sweetness and toasted almond notes. Finishes with a lingering stone fruit tartness and a subtle biscuit-like sweetness. Bitterness is non-existent; the balance is tilted toward acidity and fruit expression.

Mouthfeel. Medium-light body with a soft, slightly creamy texture. High carbonation provides a lively, refreshing effervescence. No alcohol warmth. Minimal astringency from fruit skins.

PASTORE Pastore Brewing and Blending is a small craft brewery located in Waterbeach, Cambridgeshire. The brewery and blendery draws inspiration from traditional European brewing methods and blends them with creative experimentation.Pastore Brewing and Blending's beer lineup includes a variety of barrel-aged and blended sours, each with their own distinct character and flavor profile. Despite being a relatively small operation, Pastore Brewing and Blending has gained a cult following among beer enthusiasts for their innovative and delicious sour beers. Pastore (pas-tor-ray) is Shepherd in Italian. It reflects the founders' family. The English side the Shepherds and the Italian side hailing from Emilia-Romagna and evoking fond memories of demijohns of homemade lambrusco and car boots full of meat and cheese. The fresh series looks at accessible, fun, modern takes on mix-ferm brewing, utilising Kveik and Lactobacillus co-fermentation in fruited Waterbeach Weisses, Sour IPAs and Pastry Sours. The cellar series is built around our house (mother) culture of Brettanomyces and lactic acid bacteria. We blend with different bases to produce an exciting range of aged wild ales, some in stainless steel and some as part of an extensive barrel program and blendery. Many of these beers are blended on fresh fruit in season.
