This Wild Specialty Beer offers a vibrant sensory interplay between sun-ripened fruit and aromatic botanicals. Infused with lush peaches and Earl Grey tea, the profile opens with a bouquet of fuzzy stone fruit and the distinct, citrusy perfume of bergamot. The fresh sour mixed culture provides a bright, lactic acidity that cuts through the fruit’s natural sweetness, while the tea contributes a sophisticated, leafy backbone and a hint of structured tannin. Effervescent and crisp, it mirrors the refreshing quality of an ice tea, balancing rustic farmhouse funk with a clean, zesty finish that highlights the Earl Grey’s floral and herbal complexity.
Appearance. Pours a hazy, glowing apricot to pale orange (SRM 5-7). The head is ivory, initially moderately foamy but fading relatively quickly to a thin collar, typical for beers with high acidity and fruit additions.
Aroma. High intensity aromatics lead with fresh, jammy peach and the signature floral-citrus scent of bergamot from the Earl Grey tea. Underneath, a clean lactic tartness mingles with subtle earthy funk and a faint, cracker-like malt base.
Taste. Initial impression is sharply tart and refreshing. Dominant flavors of fleshy peach are layered over a herbal, slightly tannic tea character. The bergamot adds a bright, lemony edge. Bitterness is very low, replaced by a firm acidity from the mixed culture. The finish is dry and lingering with a pleasant tea-leaf aftertaste.
Mouthfeel. Medium-light body with high, prickly carbonation that enhances the perceived acidity. A very slight, pleasant tea-derived astringency adds structure without being harsh. No notable alcohol warmth is present.
