This Imperial Stout presents an opulent sensory journey inspired by Mardi Gras King Cake. Two years of maturation in Elijah Craig, Wild Turkey, and Jim Beam Double Oak bourbon barrels impart deep layers of spirit-soaked oak and caramel. The addition of Korintje Cinnamon and Ugandan Vanilla provides a decadent spice profile reminiscent of a freshly baked cinnamon roll. Rich roasted malts offer a foundation of dark chocolate and espresso, while the high alcohol content contributes a smooth, integrated warmth. The result is a viscous, dessert-like experience where the spicy warmth of Korintje Cinnamon meets the creamy, floral sweetness of Ugandan Vanilla against a backdrop of complex charred oak.
Appearance. Jet black and opaque (SRM 40+). A modest, dark tan head forms with moderate retention, eventually subsiding to a thin collar. High viscosity is apparent through prominent legs on the glass.
Aroma. High intensity and complex. Initial notes of rich dark chocolate and espresso are joined by the spicy, woody aroma of cinnamon and the creamy, floral sweetness of vanilla. Significant bourbon influence presents as toasted oak, caramel, and a touch of coconut. Deep esters of dried figs and raisins linger in the background, complemented by a noticeable but smooth alcohol presence.
Taste. Intensely decadent with a rich center of cinnamon-spiced dough and sweet vanilla. The malt profile is dominated by bittersweet chocolate and roasted grain, balanced by a medium-low bitterness. Layers of bourbon provide notes of vanilla bean and spicy oak. The finish is long and lingering, featuring a blend of dark malt roast, warming bourbon, and a final hint of cinnamon roll sweetness.
Mouthfeel. Full-bodied, thick, and chewy with a velvety, luscious texture. Carbonation is low to moderate, enhancing the beer’s creamy weight. A significant, smooth alcohol warmth is present, reflecting its 13% ABV, without being sharp or harsh.
