Parish Brewing Co. Holy Ghost
Holy Ghost is an imposing Double IPA that pushes the boundaries of hop saturation. A massive addition of oats and raw wheat creates a plush, pillowy foundation for an explosive sensory bouquet. The nose is dominated by the complex interplay of Nelson Sauvin, providing notes of crushed white grapes and gooseberry, alongside the pungent passionfruit and citrus of Galaxy. Citra Cryo amplifies the intensity with concentrated layers of bright lime zest and mango. On the palate, a firm but smooth bitterness balances a subtle, grainy malt profile, leading to a finish defined by lingering tropical resins. Despite its formidable strength, the integration of fruit-forward hops and soft grains ensures a remarkably smooth experience.
Appearance. Deep gold to light orange; opaque with a heavy haze from the high protein content of the oats and raw wheat. Large, persistent creamy white head with dense lacing.
Aroma. Intense hop-forward profile featuring white wine and gooseberry from Nelson Sauvin, complemented by passionfruit and citrus notes of Galaxy. Citra Cryo adds concentrated lime, grapefruit, and mango. Low bready malt and neutral yeast esters appear in the background.
Taste. Dominant hop flavors of passionfruit, white grape, and tropical citrus. Firm, moderately high bitterness that is well-integrated and never harsh. Supportive grainy-sweet malt character from the wheat. Finishes medium-dry with a lingering resinous and fruity aftertaste.
Mouthfeel. Medium-full, creamy, and smooth body. Moderate carbonation. Noticeable but well-integrated alcohol warmth consistent with its 11% ABV. Minimal astringency despite the heavy dry-hop load.
