Ghost-Fu! is a sharp, West Coast-style reimagining of the iconic Parish profile, crafted in collaboration with the hop masters at North Park. This Double IPA sheds the typical haze for a clear, brilliant gold pour, emphasizing a refined hop intensity. A base of Simcoe Dynaboost provides a resinous, pine-forward foundation, while a heavy dry-hop of Citra, Mosaic, and Amarillo unleashes a tropical punch of mango, blueberry, and zesty orange. Despite its strength, it remains remarkably smooth and lean, balancing aggressive bitterness with a clean, dry finish that delivers a punchy San Diego-inspired character without the weight of a heavy malt bill.
Appearance. Deep gold to light copper in color with brilliant clarity. Features a moderate-sized, persistent off-white head with excellent lacing.
Aroma. Intense hop aroma characterized by resinous pine, grapefruit, and tropical fruit. Citra and Mosaic drive notes of mango and berry, while Amarillo adds floral orange. Malt is low and neutral, providing a clean, grainy backdrop with a subtle, well-integrated alcohol presence.
Taste. Strong, complex hop flavors of citrus zest, tropical stone fruit, and damp pine. Bitterness is firm and high but smooth and devoid of harshness. A low, supportive malt character allows for a very dry finish. The aftertaste is long and hoppy, showcasing the synergy of the modern American hops.
Mouthfeel. Medium body with a smooth, clean texture. Carbonation is medium-high, and a restrained, smooth alcohol warmth is noticeable but pleasant. No hop-derived astringency is present.
