Catch Up! is a bold, culinary evolution of the traditional Gose, reimagined as a savory and dense Tomato Gose. At 4.6% ABV, it presents a rich sensory profile dominated by thick tomato paste and a complex spice rack. The aroma is pungent with herbal celery stalk and fresh basil, underpinned by a distinct clove spiciness. On the palate, a lactic tartness provides the necessary brightness to balance the savory tomato weight. Infusions of cayenne pepper from Tabasco sauce deliver a moderate, controlled heat that lingers alongside a subtle saltiness, while the herbal notes of basil and clove provide a bittersweet complexity. It is a refreshing yet substantial savory ale.
Appearance. Opaque, deep reddish-orange similar to tomato juice (SRM 15-18). Features a dense, pinkish-white head with moderate retention and light lacing; highly hazy due to the inclusion of tomato solids.
Aroma. High intensity savory aroma. Dominant notes of ripe tomato and herbal celery stalk are complemented by aromatic basil and a spicy clove top note. A clean, sharp lactic sourness is present, with virtually no hop character or grainy malt detectable behind the adjuncts.
Taste. Initial impression is a sharp, refreshing lactic tartness followed immediately by savory, rich tomato paste flavors. The mid-palate reveals complex layers of green basil, pungent celery, and woody clove. Bitterness is very low, as the profile is balanced by acidity and the spicy heat of cayenne pepper.
