This Belgian Dark Strong Ale is an opulent sensory experience, refined by twenty-four months of oak maturation. The final ten months in Calvados barrels introduce a sophisticated layer of baked apple and brandy-like esters that dance alongside the style's signature dark fruit. Deeply layered bready-toasty malts provide a sturdy foundation for intense notes of dried figs, dates, and raisins. The wood influence contributes a structured vanilla and subtle tannic dryness that masterfully balances the inherent sweetness. With its 10% alcohol seamlessly integrated as a perfumy warmth, the beer finishes with a complex, lingering resonance of caramelized sugar and spiced orchard fruit.
Appearance. Deep coppery-brown with brilliant ruby highlights (20-22 SRM). Boasts a huge, dense, and persistent tan head with excellent lacing. Clarity is generally clear despite its strength.
Aroma. High intensity; rich toasted bread and deep caramel malt character. Pronounced esters of raisin, plum, and dried fig are complemented by a distinct Calvados-derived cooked apple note. Subtle spicy phenols like black pepper and a soft, perfumy alcohol presence are evident alongside oaky vanilla.
Taste. Initial impression is malty-rich and decadent. Flavors of molasses, dates, and caramelized sugar are balanced by a refined apple-brandy character from the Calvados wood. Bitterness is medium-low, providing just enough structure against the malt. The finish is moderately dry with lingering notes of dark fruit, oak tannins, and a smooth, warming spiritous quality.
Mouthfeel. Medium-full body with a creamy, velvety texture. Carbonation is moderate and gentle on the palate. Notable but smooth alcohol warmth without being hot or solvent-like. Very low astringency from the extended wood aging.
