Lunatic (2022) is a masterfully complex Brett Beer that showcases a sophisticated evolution of its golden ale base. The sensory profile is defined by a vibrant interplay between funky Brettanomyces notes of leather and earthy hay and the bright, acidic punch of seabuckthorn. Aging in red wine and bourbon barrels imparts a structured vinous quality and subtle vanilla-oak depth, while local quinces provide a delicate, floral perfume. The addition of honey lends a faint meadow-like aromatics to a body that remains bone-dry. Effervescent and tart, it finishes with a lingering, puckering fruit character and refined tannic dryness.
Appearance. Deep golden color (SRM 7) with a slight haze from the mixed culture fermentation and fruit additions; pours with a moderate white head that recedes to a persistent collar with light lacing.
Aroma. High intensity and complex; prominent Brettanomyces character featuring horse blanket and leather, layered with sharp citrus and berry notes from seabuckthorn. Floral quince and a hint of wildflower honey are supported by subtle red wine tannins and a whisper of bourbon-soaked oak.
Taste. The palate is dominated by a bright, lactic acidity and tart orchard fruit flavors including pear-like quince and acidic seabuckthorn. Brettanomyces contributes an earthy, spicy complexity. Malt is low and cracker-like, while hop bitterness is minimal, allowing the puckering acidity and dry oak tannins to provide structure. The finish is exceptionally dry and clean with a lingering vinous aftertaste.
Mouthfeel. Medium-light body with moderate-high carbonation that enhances the perceived tartness. There is a light, pleasant alcohol warmth and a noticeable but refined wood-derived astringency on the tongue.
