Paname Brewing Company’s Harmonie is a vibrant Wild Specialty Beer that masterfully balances exotic fruit with earthy botanical depth. Brewed with a base of Pilsen and Wheat malt, this sour ale showcases a lush, tropical mango profile punctuated by the zesty, spicy snap of fresh ginger. The addition of beetroot introduces a unique, grounding earthiness that rounds out the bright, lactic acidity. Fermentation character provides a clean, tart backbone, while a light touch of Magnum hops ensures a crisp structure. Appearance. Striking deep magenta to ruby-red hue (SRM 25+ derived from beetroot) with a persistent, light-pink foam head that leaves delicate lacing. High haze from the wheat malt and fruit pulp, appearing nearly opaque.
Aroma. High intensity aromatics of fresh, pulpy mango and sharp, zesty ginger. An underlying earthy, root-like note from the beetroot adds savory complexity. The wild fermentation character provides a moderate lactic tartness and a hint of rustic funk, while malt is restricted to a subtle crackery graininess.
Taste. Initial impression is a sharp, refreshing lactic acidity. Dominant flavors of ripe mango are quickly joined by the warming, spicy bite of ginger. The beetroot provides a distinct, savory earthiness that balances the fruit's natural brightness. Pilsen and wheat malts offer a soft, bready foundation. Finishes very dry and clean with a lingering gingery tingle and minimal hop bitterness from the Magnum.
Mouthfeel. Medium-light body with high, prickly carbonation that enhances the perceived tartness. A slight, pleasant astringency from the ginger and beetroot skins is present. Alcohol warmth is subtle and well-integrated at 6.5% ABV.
