This Specialty IPA showcases a vibrant fusion of New World and noble hops over a crisp base of 100% pale malts. The aroma is defined by the unique white wine and gooseberry notes of Nelson Sauvin and Hallertau Blanc, layered over the citrusy zest of Amarillo and Cascade and the spicy undertone of Saaz. Tomahawk provides a clean, resinous backbone. On the palate, a moderate 37 IBU bitterness balances the bright Sauvignon Blanc character, leading to a remarkably dry and refreshing finish. It bridges the gap between classic Belgian brewing sensibilities and modern aromatic hop complexity.

Appearance. Pale gold to light amber (5-7 SRM). Brilliant clarity with a dense, persistent white head that leaves moderate lacing on the glass.

Aroma. Moderate to high hop intensity featuring distinct notes of crushed white grapes, elderflower, and gooseberry. Secondary layers of citrus zest, pine resin, and a subtle herbal spice. Malt is low, presenting as light cracker or fresh bread. Fermentation is clean with very faint stone fruit esters.

Taste. Initial impression is crisp and hop-forward. Prominent flavors of Sauvignon Blanc grapes and lemon peel from the dry-hopping. A supportive, lean malt sweetness provides a foundation for the moderate bitterness. Mid-palate reveals floral and earthy spicy notes. Finishes very dry and clean with a lingering grape-skin and resinous aftertaste.

Mouthfeel. Medium-light body with a smooth, slightly crisp texture. Moderate-high carbonation enhances the refreshment. Alcohol warmth is light and well-integrated at 6% ABV. No astringency.
