Talk To the Wind is an evocative Brett Beer that showcases the rustic complexity of its multi-grain bill of barley, spelt, and wheat. After a full year of barrel maturation, the nose presents an inviting bouquet of earthy funk and seasoned wood. On the palate, this wild ale is remarkably dry and refreshing, leading with a bright, tart citrus acidity that melds into notes of dried hay and deep, earthy character. The influence of the wood provides a subtle structural backbone without overshadowing the delicate fermentation esters, resulting in a balanced, highly attenuated profile that captures a refined farmhouse spirit.
Appearance. SRM 3–6. Pale straw to light gold with a slight, persistent haze from the wheat and spelt. Pours with a moderate white head that fades to a thin collar; light lacing.
Aroma. Moderate to high intensity. Dominant notes of barnyard funk, wet hay, and damp earth. Complementary aromas of lemon zest and grapefruit are supported by a faint, bready graininess and a dry, woody oak presence.
Taste. The initial impression is tart and crisp. Flavors of sharp citrus and green apple transition into a complex mid-palate of hay and rustic earthiness. Minimal hop bitterness allows the Brettanomyces character to shine. The finish is exceptionally dry and clean, with a lingering mineral and woody aftertaste.
Mouthfeel. Medium-light body with a crisp, effervescent high carbonation. Very low astringency despite the barrel aging. Refreshing and highly attenuated with a subtle, well-integrated alcohol presence.
