This barrel-aged Saison showcases a rustic, grain-forward profile driven by a significant addition of malted and raw spelt. The complex character stems from an eight-month maturation in oak, imparting delicate woody undertones that complement the beer's bone-dry finish. Plentiful dry-hopping introduces vibrant tropical and floral layers, bridging the gap between traditional farmhouse funk and modern aromatic intensity. Effervescent and bright, it balances the soft, grainy sweetness of the cereal with a clean, lingering bitterness. The result is a highly attenuated, refreshing ale that marries the earthy heritage of spelt with a sophisticated, barrel-matured elegance.
Appearance. Pale gold with a slight haze from the raw grain and dry-hopping (6 SRM). Features a dense, rocky, long-lasting white head with significant Belgian lacing.
Aroma. High intensity with a complex blend of tropical fruit (mango, pineapple) and floral hop notes. The yeast contribution is moderately spicy and peppery, layered over a rustic, grainy malt base from the spelt. Subtle, earthy, and woody oak notes are present from the extended barrel aging.
Taste. Initial impression is fruity and bright, leading into a soft, grainy palate defined by nutty spelt flavors. Hop character is moderate, providing tropical citrus flavors and a structured bitterness. The fermentation profile is peppery and dry. Finishes bone-dry with lingering woody undertones and a clean, bitter aftertaste.
Mouthfeel. Medium-light body with very high, effervescent carbonation. No significant alcohol warmth. Crisp and highly attenuated, with a slight, pleasant tannic dryness from the oak and raw spelt.
